This is where it gets serious. You've done Level 2, now you specialise. Macarons, chocolates, showpieces, plated desserts, advanced bread techniques. You'll push your creative skills further than you thought possible, with tutors who've trained at the highest level and coach students for national competitions. Our patisserie students compete in WorldSkills UK and ICC events. They travel. They win. If you want to be a pastry chef, food developer, or run your own business — this is the course that takes you there.

What You'll Need

  • Level 2 Certificate/Diploma in Patisserie and Confectionary or professional cookery or significant industry experience in Patisserie/bakery or confectionary.
  • PLUS GCSE English or Maths at Grade 4 or above
  • Ideally students need to be proficient in digital skills.
If you still need grade 4 in GCSE Maths or English, support continues at Level 3. It's built in.
What You'll Learn

This level will suit learners wishing to develop more advanced technical skills in patisserie and confectionery.

There is one qualification to choose from at this level:

  • Diploma in Professional Patisserie and Confectionery

In order to earn these qualifications, you must complete all units including:

  • Supervisory Skills in the Hospitality Industry
  • Exploring Gastronomy
  • Advanced Skills and Techniques in Producing
  • Dough and Batter Products
  • Petit Fours
  • Paste Products
  • Hot, Cold and Frozen Desserts

  • Display Pieces and Decorative Items

Including a practical synoptic exam at the end of the course.

Bakers and Flour Confectioners

Up to £30,656 /year

Bakers and flour confectioners prepare and bake dough, pastry and cake mixtures and make and finish flour confectionary products by hand.

Chefs

Up to £38,983 /year

Chefs plan menus and prepare, or oversee the preparation of food in hotels, restaurants, clubs, private households and other establishments.
